VINIFICATION
Pinot Grigio grapes are harvested in late August early in their ripeness spectrum, when acidity is optimal for the sparkling process to take place. After destemming operations, the must is immediately cooled down to preserve primary aromas and freshness. A fast maceration on the skins is carried out for the pale-rosé color to be extracted. Vinification is performed under controlled temperature by means of selected varietal yeasts with the aim of enhancing fruity scents. The wine is then racked and aged on its lees in stainless-steel tanks before it is subjected to secondary fermentation so as to reach its sparkling status.
TASTING NOTES
Pale-pink in color with bright copperish reflections, this elegant wine bursts with distinctive violet and apricot notes, among which subtle exotic fruits nuances can also be perceived. Crisp, refreshing and clean taste, enhanced by wild-strawberries overtones, it features tiny and lingering bubbles flowing gently on the palate. Medium-light backbone, well-balanced texture.
FOOD AND WINE PAIRING
This sparkling pinot grigio is a great aperitif wine, making a wonderful match to finger-food, appetizers and antipasti. Best enjoyed with marinated fish, scampi and grilled king-prawns, it is also a fine pair to mussels in tomato sauce and seafood risotto.
