VINIFICATION
Both vinification and sparkling process are aimed at preserving all of the distinctive features of the product, thus enhancing its vibrant fragrance and unique aromas. Once grapes have been soft-pressed, the must is fermented at a controlled temperature of 17 C° and subsequently the wine is racked and placed in steel containers for its brief refinement. At a later stage, the cuvée undergoes a second fermentation in pressure tanks by means of selected yeasts. Filtering and stabilization are usual operations to be performed prior to bottling.
TASTING NOTES
Bright straw-yellow in colour, Perlanima frizzante is an exceptionally pleasant, richly aromatic, intense wine, enhanced by creamy, lingering bubbles which enfold gently on the palate. Harmonious and well-orchestrated, with a perfect balance between the acidulous and sugary elements, it releases refreshing fruity and floral nuances, with a characteristic hint of citrus and peach.
FOOD AND WINE PAIRING
Extremely versatile wine, perfect whenever raising glasses for a toast. Best enjoyed as an accompaniment to Mediterranean-style light courses, such as low-fat white meats, fresh seafood and vegetables.
