VINIFICATION
This intensely aromatic sparkling wine is the result of our know-how and skills in the art of fine bubbles. The whole vinification process is performed in full respect of tradition and aimed at enhancing all of the fresh, intensely fruity features of the grapes of the cuvée. After the grapes’ soft-crushing stage, the must is immediately cooled, cleaned and left to ferment at a temperature no higher than 17 C°. Subsequently the wine is racked and then stored in steel vessels. The sparkling process takes places in pressure tanks by means of selected varietal yeasts, according to the rules of the Charmat method.
TASTING NOTES
Pale straw-yellow in colour, with a crystal-clear lingering perlage that conveys intensely-refreshing citric notes and harmonious white-fleshed fruit nuances. Its vigorous, superb aromatic overtones are fully enhanced by its creamy bubbles softly caressing the palate. Sapid and well-balanced Perlanima features a pervasive minerality bringing to light an incredibly deep, vertical tasting profile.

Extremely versatile sparkling wine, ideal whenever raising glasses for a toast, it is a perfect match for finger-food, appetizers and fresh seasonal vegetables served with vinaigrette. Its one-of-a-kind minerality makes it an unforgettable pair to raw and marinated seafood.
