Pinot Nero grapes are harvested early, before full ripeness, in order to preserve their acidity, freshness and varietal aromas, which would be lost if they were picked early. These grapes produce a light-bodied yet polished wine, extremely suitable for being subjected to a sparkling process. This operation, carried out in pressure tanks by means of selected yeasts, enhances the wine and gives way to a more rounded flavour. During all vinification and sparkling operations, the temperature is kept constantly under control. Before use, this sparkling wine is clarified and filtered.
The colour of this wine recalls the skin of red onions, while the bouquet is, as with all Pinot varieties, elegant and fragrant, with pervasive notes of caramel and sweets. Slightly acidulous, marvelously-full flavour.
