Pinot Nero Veneto IGT

VINIFICATION

Pinot Noir grapes are harvested early, before full ripeness, in order to preserve their acidity, freshness and varietal aromas, which would be lost if they were picked later in ripeness spectrum. These grapes give way to a medium-bodied yet polished wines, renowned the world over for its outstanding elegance. Crushed grapes are subjected to maceration on the skins for 12-15 days at a temperature of 20°C by means of selected varietal yeasts. Once fermentation process is complete the lees are drawn off, then the wine is racked and kept in steel tanks for its refinement process to start.

TASTING NOTES

Distinctive, pale ruby-red wine revealing elegant talc overtones and delicate forest fruit notes on the nose, offset by a noble, rounded tannic nuance on the palate. Medium-bodied and with a persistent aftertaste enfolded by a velvety texture.

FOOD AND WINE PAIRING

Ideal partner of fat-free white meat courses, it is also a superb accompaniment to mixed bean soups and fresh beef carpaccio.
