Project Description

Villa Cornaro Prosecco Doc Rosé

VINIFICATION

Glera and Pinot nero grapes are harvested separately, so to enhance their varietal characteristics. They are kept separated during vinification as well, which is white for Glera red for Pinot nero. Musts are consequently assembled and the cuvée is fermented for 60 days according to Charmat Method, in order to reach the sparkling status. Before bottling, this sparkling rosé is kept under controlled temperature and it is filtered and stabilized.

TASTING NOTES

Pale-pink in color with bright pearly reflections, this elegant wine bursts with distinctive pear and apple notes typical of Glera grapes; also typical Pinot nero’s wild-strawberry aromas can be perceived. Zesty, refreshing and clean taste, it features tiny and lingering bubbles flowing gently on the palate. Medium-light backbone, well-balanced texture.

FOOD AND WINE PAIRING

This Prosecco Rosé is excellent for both formal and informal aperitifs; raw fish and shellfish are superb pairings, as well as fish soups. It is surprisingly good also with grilled chicken and paella.
